Today I will be visiting my cousin in the Bronx, who is hosting Thanksgiving for the second year in a row. I woke up this morning to her text message with a photo of the turkey already prepared and ready to be eaten – it looks delicious! My contribution will be my specialty, lasagna. Although it’s not a typical Thanksgiving dish, it’s one of my favorite pasta dishes and was a success last year – there weren’t any leftovers.
I’m looking forward to spending today with my family. We don’t see each other very often but when we get together it is always a blast; Spanish music will be playing, we’ll be dancing, feasting on turkey and pernil, and enjoying each other’s company. Its moments like these that I’m really grateful for.
I want to wish everyone a very Happy Thanksgiving – wear clothes that are loose, don’t be shy to eat seconds, even thirds, and “remember when you love what you have, you have everything you need”.
