There are several places that I want to visit on my bucket list (Thailand, Greece, and Hawaii to name a few), and I’m so happy that I can finally cross off Costa Rica! We just recently returned from our 5 day vacation packed with white water rafting, hiking, horseback riding, and more time spent in water than I had anticipated. It was an absolute blast!!  The best part of it all was being able to sleep in a tree house surrounded by wildlife.  Every morning we would wake up to freshly made coffee and cheese on our porch, and for home-made breakfast we would walk over to el Rancho.  Mark and Lucy are the sweetest hosts – they helped book our tours, were extremely informative and even supplied us with bug spray (I am cursed with sweet blood).  Our vacation probably would’ve been more complicated without them.

The first couple of days we visited two volcanoes (Volcan Poas and Arenal Volcano), floated along the Penas Blancas River and braved the choppy waters of Rio Balsa. For lunch we were served the typical dish casado – consists of rice and beans, served side by side (or “married”, hence casado) to carne asada, fried plantain, yucca and white cheese. The hosts surprised us with music and a shot of moonshine. It was absolute bliss!
